Filipino-style chicken curry is a favorite dish loved by most Filipinos. It is a deliciously spicy chicken recipe that will leave a burning sensation in your mouth. Of all the chicken recipes that I know, this is my second favorite next to fried chicken. After your first try, it will surely become one of your favorites, too.

Ingredients:

  • Chicken – 1 lb (cut into serving pieces)
  • Oil – 2 to 3 tbsp
  • Potatoes – 3 pcs (peeled, quartered and fried)
  • Garlic – 3 cloves (minced)
  • Onion – 1 large (quartered)
  • Patis (fish sauce) – 1 tbsp
  • Curry powder – 3 tbsp
  • Water – 1 cup
  • Red bell pepper – 1 pc (cut into big squares)
  • Celery stalks – 3 pcs (cut into 1-1/2″ long)
  • Coconut milk or evaporated milk – 1 cup
  • Salt and pepper –  to taste

Cooking Procedure:

  • Fry the potatoes in a pan then set aside.
  • Fry the chicken pieces using the same pan until it the color turns slightly brown.
  • Add the onion and garlic then sauté for 1 to 2 minute or until soft.
  • Pour in the fish sauce and add the curry powder, salt and pepper as seasoning. Stir for about 2 minutes.
  • Pour in the cup of water then cover until it comes to a boil. Adjust the heat to low and add the fried potatoes, bell peppers and celery. Simmer until half done, takes about 3 minutes.
  • Pour in the milk and cook for 7 more minutes. Stir occasionally. When using evaporated milk, cook in a shorter period to avoid curling of the liquid.
  • Take out from the heat and serve while hot.

In this simple recipe below, it will take almost an hour and 45 minutes to cook the chicken. You can store the boiled chicken pieces for future usage. Ingredients

1 whole chicken (3 pound)

One large size onion, cut in halves – unpeeled

Three carrots, slice into chunks – unpeeled

Grossly cut celery – 2 stalks

Whole peppercorns – 1 tablespoon

Water to cover up

Directions

Take a large bowl to put the ingredients. Place the chicken in that bowl along with the other vegetables like peppercorns, celery, carrots and onions. Add water as per your requirement to cover all the ingredients in the bowl. Put a lid on that bowl to cover the bowl and let it boil for some time. After sometime decrease the heat and let it boil gently and cook it for one and half hour until the chicken pieces can be pulled off from the bones. Remove the chicken from the water and place it in a platter to let it cool down. Cooling it off chop or shred the chicken as per your requirements.

You can omit carrots and add some parsley and a teaspoon of Cajun seasoning and a bay leaf to add a different taste. If you like the taste of garlic, then add a clove into the boiling vegetables.

Ingredients:

3 chicken breasts cooked

2 bunches of fresh broccoli or 2 packages of frozen broccoli – 10 oz. Each

2 cans of cream of chicken soup

1 cup of mayonnaise

1 tsp. Lemon juice

1/2 tsp of curry powder (optional)

1/2 to 1 cup of shredded cheese (cheddar cheese is best)

1/2 cup of bread crumbs (grate day old bread to get the best results)

1 tbsp of melted butter

Directions:

Pre-heat the oven to 350°.

Cook the broccoli in a pot of water until it is tender. Drain off the water and arrange the pieces of broccoli in a greased rectangular baking dish. Arrange the chicken breasts on the top of the broccoli.

Then, mix the soup, curry powder, mayonnaise and lemon juice together. Pour this mixture over the chicken breasts. Sprinkle the cheese over this layer and top with the bread crumbs.

Bake the casserole for 25-30 minutes.

This recipe yields 6 – 8 servings.

I found this delicious Ground Chicken Recipe for Chicken Burgers and my family love it – especially the kids. It’s full of flavour and lower in fat than a regular beef burger because it uses ground chicken breast meat which contains minimal fat. Get the kids to help you assemble the chicken burgers and even make their own sauces. The recipe contains optional extras like cheddar cheese to enclose in the chicken burger patties and chilli powder for an extra spicy taste.

Chicken Burger Recipe Ingrediets

  • oil, for cooking
  • 1 large onion, finely chopped
  • 750 g (1 1/2 lb) chicken mince
  • 1 teaspoon paprika
  • 1 – 2 teaspoons chopped red chilli (optional)
  • 3/4 cup (60 g/2 oz) fresh breadcrumbs
  • 1 egg, beaten
  • 2 tablespoons chopped fresh lemon thyme or chives
  • 6 slices of Cheddar cheese (optional)
  • 30 g (1 oz) butter
  • 1 -2 cloves garlic, crushed
  • 6 crusty bread rolls
  • lettuce, tomato, extra sour cream, pickled cucumbers and sweet chilli sauce, to serve

  1. Fry the onion in a bit of the oil over medium heat until golden. Drain the onion on paper towels and cool slightly.
  2. This is where it gets messy. Wash you hands thoroughly and then get ready to mix with your fingers. In a large bowl combine the onion, chicken mince, paprika, chilli, breadcrumbs, beaten egg, lemon thyme and some salt and freshly ground black pepper. Mix it well using your hands. Divide the mixture into 6 equal portions and shape into round balls. If you want a cheese burger then press a piece of cheese into the centre of each ball and mould the mixture to completely enclose the cheese. Flatten the balls slightly and shape to make chicken burger patties.
  3. Heat the butter and 1 tablespoon of oil in a large frying pan. Add the garlic. When the mixture is foaming, add the patties, pressing with a spatula to flatten slightly. Cook over medium heat for about 3 minutes on each side, or until the patties are nicely browned and the meat cooked through. If you put cheese in the middle then the cheese should be melted.
  4. Cut the bread rolls in half. Toast if you prefer and spread with a little butter. Fill the rolls with lettuce and tomato slices, a chicken patty, sour cream, some pickled cucumbers and sweet chilli sauce.

What You Need:

  • 4 whole chickens cut up and shredded
  • 4 cups of rice, uncooked
  • 4 cans of cream of mushroom soup
  • 4 cans of water
  • 4 tablespoons of butter

How to Make It:

Preheat the oven to 350 degrees.

You will need two large lasagna pans. Place half the rice in one pan and half in the other pan. Place shredded chicken on top of the rice, dividing between the two pans. In a large bowl mix together the soup and the four cans of water until well combined. Pour over top of the chicken. Dot the top with the butter. Cover pans with foil. Bake for 1.5 to 2 hours. Uncover and broil for 5-10 minutes to brown the top.

Serves 18-24 people.

Perhaps the pork month puts you in the mood for some barbecue. What sounds more appetizing is a super tender textured pork meal with taste of a real smoked barbecue – pulled pork.

Pulled pork is usually a nice pork shoulder or butt that is smoked for hours at a low temperature. This easy recipe infuses the pork with a pleasant, smoky barbecue flavor and aroma while slow-cooked in a slow cooker or crock pot. Since I typically add just an ample amount of liquid for my sauce so my meat does not swim in a pool of water, my pulled pork usually ends up a little saucy resulting to an incredibly moist, tasty and tender meat that just falls at the touch of a fork.

Ingredients

  • 6 lbs. pork shoulder or pork butt, trimmed of any excess fat
  • 1 large onion, sliced finely
  • 1 cup ketchup
  • 1/2 cup tomato paste
  • 2/3 cup of apple cider vinegar, or wine vinegar
  • 1/2 cup of brown sugar
  • 4 tablespoons Worcestershire sauce
  • 3 tablespoons mustard
  • 2 teaspoons paprika
  • 3-4 pieces crushed garlic, or 1 teaspoon garlic powder
  • A dash of cayenne pepper
  • 1 teaspoon salt, add more if needed
  • 1 1/2 teaspoon ground black pepper
  • 3/4 cup water

Directions

Scatter onions on the bottom of your slow cooker, or crock pot then put the pork on top so it sits on the onions. Form your barbecue sauce by whisking all remaining ingredients together in a mixing bowl. Add more pepper or salt if necessary. Pour half of the sauce over the pork. Reserve the other half. Cover and cook on Low for 8 hours maximum.

After the long cooking, remove pork from slow cooker or crock pot and transfer to a large bowl. Cut the meat into strips, or shred with a fork then put back into slow cooker. Cook further for about 5 minutes, or until meat has soaked up sauce just enough. This easy recipe for pulled pork can be held on the “warm” setting in the slow cooker, or crock pot for serving. You may serve on soft sandwich rolls, or plain rice topped with extra barbecue sauce, and a side of coleslaw for some crunch.

At one time I forgot to take the meat out of the freezer the night before to defrost, I’ve been able to cook the same easy recipe for pulled pork in my pressure cooker, frozen, for about 40 minutes with excellent results. You may also add a healthy dose of liquid smoke to the sauce for a stronger barbecue flavor.

Chicken and beer are good on its own. But I bet they are great together. There have been a lot of recipes that uses beer instead of wine. A good beer and chicken recipe is a great addition for your Sunday barbeque party. Beer has sugar in it and sugar is known to tenderize the meat, by putting beer into your regular chicken recipe, you will have a wonderful eating experience.

Many recipes require you to add wine or soda or sometimes even fresh fruit. Beer works the same as lemon, it makes the meat tender; but by using beer, it leaves a distinct taste and jazzes up your old recipe. Beer and chicken recipes are slowly getting popular and working their way up to every kitchen’s favorite.

Beer has been known to be utilized in several recipes. There are steaks marinated in beer, bread made of flour and beer and seafood cooked in beer sauce. But I guess, the best one is always the simplest; good old beer can chicken recipe. Here are some recipes that you can try at home:

Beer Butt Chicken

Ingredients: 1 cup butter; 2 tbsp garlic salt; 2 tbsp paprika; salt & pepper to taste; I can beer and 1 whole chicken.

Directions: Preheat your grill at low heat; in a skillet, melt half cup butter and mix in half the garlic salt, half the paprika, salt & pepper; discard or better yet drink half of the beer; add remaining garlic, butter, paprika, salt and pepper to the remaining beer can; insert can inside the chicken; baste chicken with seasoned butter; place in a baking sheet and bake on the grill; cook for over three hours in low heat or until internal chicken temp reaches 180 degrees Fahrenheit. Enjoy your beer can chicken recipe.

BBQ Beer Chicken

Ingredients: 2 tsp lemon pepper; 2 tsp salt; 2 tsp black pepper; 1 tsp cayenne pepper; 2 tsp garlic salt; 2 whole chicken (cut in halves); 1 can beer.

Directions: Mix seasoning together in a bowl and coat chicken halves. Let it sit in the refrigerator for 2 hours before grilling. Preheat the grill. Grill chicken for 15 minutes bone side down. Turn chicken and grill for 15 more minutes. Pop the beer can and spray enough mist without disrupting the flame. Turn chicken often; baste it with beer until the internal temperature of the beer reaches 165 degrees Fahrenheit. Definitely a beer can chicken recipe worth trying.

Well, my wife Sue said this is the very best thing that I have ever cooked to date. I must admit that the blend of flavors is really unique. I am not really a fan of cinnamon, but I LOVE the way that it worked in this recipe!

Ingredients:

6 to 8 chicken thighs (with skin)

3 tbsp. extra-virgin olive oil

2 tsp. ground cinnamon

1 tsp. kosher salt

1 tsp. coarse ground black pepper

1 (14.5) oz. can diced tomatoes with juice

1 (3.8) oz. can sliced ripe olives, drained

1 (14.5 oz.) can chicken broth

3/4 cup dry, white wine

4 cloves minced garlic

2 cups yellow onions, diced

1 tsp. dried oregano leaves

1 tsp. dried mint flakes

1/2 cup crumbled feta cheese

6 to 8 servings cooked rice pilaf

(Cook the pilaf according to instructions on package.)

Instructions:

Rinse the chicken and pat dry. Mix the salt, pepper and cinnamon in a bowl. Rub this seasoning on all sides of the chicken. In a large, deep skillet, heat the olive oil over medium-high heat and add chicken, browning for about 5 minutes on each side. Then remove chicken, put on a platter and set aside.

Reduce heat to medium and add the onions and minced garlic to the skillet. Stir constantly and cook for a few minutes until the onions are tender and a light golden brown. Add the wine and scrape the bottom of the skillet with a wooden spoon, loosening everything that is stuck to the bottom of the skillet.

After a few minutes, add the tomatoes, the olives, the chicken broth, the dried oregano leaves and the dried mint flakes. Stir everything together and return the chicken to the skillet. Cover the skillet and simmer over low heat for an hour, or until chicken is thoroughly cooked. Serve the chicken over the pilaf, cover with the sauce, and sprinkle feta cheese over the top. Serves 6 to 8.

Chicken marinated in a rice wine, soy sauce, ginger and garlic marinade, then fried and sprinkled with roasted sesame seeds. My family already tried and loved it. A delicious Chinese chicken recipe.

Ingredients:

1 pound boneless chicken

2 tablespoons sesame seeds

1 tablespoon sesame oil

2 tablespoons vegetable oil

4 ounces small mushrooms, quartered

1 large green bell pepper, seeded and cut into strips

4 scallions, chopped diagonally

boiled rice, to serve

Marinade:

2 teaspoons cornstarch

2 tablespoons Chinese rice wine or dry sherry

1 tablespoon lemon juice

1 tablespoon soy sauce

few drops of Tabasco sauce

1-inch piece fresh ginger, grated

1 garlic clove, crushed

1. Trim the meat and cut into thin strips about 1/2 x 2 inch.

2. Make the marinade: In a bowl, blend the cornstarch with the rice wine or dry sherry, then stir in the lemon juice, soy sauce, Tabasco sauce, ginger and garlic. Stir in the strips, cover and leave in a cool place for 3-4 hours.

3. Place the sesame seeds in a wok or large frying pan and dry-fry over moderate heat, shaking the pan, until the seeds are golden. Set aside.

4. Heat the sesame and vegetable oils in the wok or frying pan. Drain the meat, reserving the marinade, and stir- fry a few pieces at a time until browned. Remove with a slotted spoon.

5. Add the mushrooms and green pepper and stir-fry for 2-3 minutes. Add the scallions and 1 minute more.

6. Return the meat to the wok or frying pan, together with the reserved marinade, and stir over a moderate heat for a further 2 minutes, or until the ingredients are evenly coated with glaze. Sprinkle the sesame seeds on top and serve immediately with boiled rice.

This chicken dog food recipe will allow your dog to have a health snack that they will absolutely adore. You will need whole wheat flour, regular flour, cornmeal, olive oil, three eggs, fresh garlic cloves, and chicken giblets with juice. In your blender, add 3 tablespoons of olive oil, 3 eggs, ½ cup gizzard juice, 1 pound of chicken giblets, and 4-5 fresh garlic cloves. Blend well and till the mix is a bit chunky. Add the blended mixture to a bowl containing 1 cup of whole wheat flour, 1 cup of regular flour, and 1 cup of cornmeal. Bake on a greased or foiled cookie sheet at 450 degrees. Your cookies can be stored in the refrigerator for up to four days or frozen to last longer.

The Chicken Fix

A chicken dog food recipe is just what the vet orders when you pup is ill. This one can also be used when your dog is well too. You will need three boneless chicken breasts, one cup cooked white rice, one cup cooked carrots, and one cup of cottage cheese. Boil the chicken and then cut into cubes. Add the chopped chicken to the carrots, rice, and cottage cheese. If you find it a bit too dry, you can add some chicken broth to thin it out a bit. Separate portions and store in the refrigerator for up to 3 days or freeze. If you want to add some extra flavor to your pup’s meal you can also add a fourth cup of potatoes or cheese. This will not only help a doggie tummy feel better, but keep a healthy doggie happy.
