It is common for Italians to sit down to a large bowl of pasta for lunch or as a starter. For quick dinners or lunch, I enjoy mixing up various types of pasta dishes (I cannot make it long without a pasta fix). The recipe below has endless varieties. First try the recipe and then the next time you make it, add any number of other delights including sun dried tomatoes, artichokes, fresh mozzarella, meatballs or Italian sausage, etc.

Ingredients (4 to 5 servings):

  • 1 pound fresh button mushrooms sliced (could use portabella mushrooms)
  • 1/2 cup dry red wine
  • 2 tablespoons butter
  • 1 pound penne (fresh if you can make or find it)
  • 3 tablespoons extra virgin olive oil
  • 1 pound grated parmesan cheese
  • 4 garlic cloves
  • 1 teaspoon fresh basil (you can substitute an equal amount of dry if you don’t have fresh)
  • 1 teaspoon fresh oregano (you can substitute an equal amount of dry if you don’t have fresh)
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon black pepper
  • 1 teaspoon salt

Preparation:

Rinse the mushrooms and place them in a frying pan. Add the wine and butter and cook on high until all the liquid is gone – about 20 minutes. Set them aside. Meanwhile, cook the penne in a Dutch oven containing a few quarts of boiling salt water for about 10 minutes. Drain through a colander once the penne has cooked and make sure most of the water is gone but the pasta is still hot. Put the pasta back in the Dutch oven along with the olive oil, parmesan, garlic, basil, oregano, pepper flakes, salt, and pepper and mix. Now if you would like, try some of the other ingredients I mention in the introductory paragraph. My family and I will eat this as a main course for dinner sometimes we like it so much.

Chicken in the crock-pot, chicken in the oven, chicken on the grill, or chicken on the stove, no matter how you want to cook it there is a simple chicken recipe for you. I have found plenty of them.

My favorite tool in the kitchen is my crock-pot. You may be a pro at using your crock-pot or maybe it’s been so long since you’ve used it that it’s covered in an inch of dust, either way I have recipes that you’ll be able to enjoy. Well, this first recipe I’m going to show will use that crock-pot so if you are the later then you’ll want to get it out and give it a good scrub.

Chicken and Mushroom Gravy

4 chicken breasts

2 cans of condensed cream of mushroom soup

1 c sour cream

Put your chicken in your crock-pot, it does not matter how they are in there just that they are in there. Then in a bowl mix together the soup and sour cream so that it is smooth. Then pour your soup mixture over the chicken and let cook on high for 4-5 hours or low 8-9 hours. This recipe goes well with mashed potatoes and broccoli but you could even use the gravy over a baked potato.

This next recipe takes a little more time and requires you to plan it the night before. So write yourselves a note to remember to prep it before bed.

Soy Marinade

1 c vegetable oil

2 c sprite

½ c soy sauce

A dash of garlic powder

Chicken

You just mix this up in a bowl, or pan and then put the chicken in to marinade. I usually do 6-8 breasts with this but you can cut it in half and do 2-4 if you don’t need so many. Let this marinade overnight for best flavor. Also I like this done on the grill best, but it also works well in the oven. You can choose the stove top but I’ve noticed it loses a lot of flavor when done on the stove.

Want to prepare an easy chicken recipe that is also made from readily available ingredients? This recipe should fill the bill. Very few cookbooks I have found have recipes for Alfredo Sauce. On the internet you can find quite a few but many call for a long list of ingredients that I feel are not really necessary for a good Alfredo sauce.

The origins of Alfredo sauce go back to 1914. The dish now known as “Fettuccine Alfredo” was first called Fettuccine al triplo burro, which translates to Fettuccine with triple butter. The name Alfredo refers to Alfredo Di Lelio, a Roman innkeeper. It seems that his wife had lost her appetite during her pregnancy. He went to his kitchen and made a dish with egg noodles, Parmigiano cheese, cream and butter. It was said that his pregnant wife was delighted with the dish and gained back her appetite.

Although many versions have been made since, the version here is made with olive oil in place of the butter and milk rather than cream. Flour is added to facilitate the browning of the chicken pieces. The roux made from this flour and olive oil, and the effect of the melted Parmesan cheese accomplishes the thickening.

Chicken and Noodles, Alfredo

Ingredients

2 chicken tenders (about 4 ounces total), cut into bite size pieces

2 tablespoons olive oil

2 tablespoons all purpose flour

1/2 teaspoon salt

1/8 teaspoon pepper

1 cup milk

1/2 cup grated Parmesan cheese

4 ounces of wide egg noodles

Instructions

1 – Start the egg noodles cooking in salted water (6 – 8 minutes) while preparing the sauce.

2 – Mix the salt and pepper with the flour in a medium sized bowl.

3 – add the chicken pieces and shake well to coat all the pieces.

4 – Heat the olive oil in a frying pan or skillet.

5 – Add the chicken pieces and cook until browned.

6 – Add the milk to deglaze the pan, and continue heating until the sauce thickens.

7 – Add the Parmesan cheese and when melted ( 1 or 2 minutes) remove from the heat.

8 – Toss with the cooked noodles and serve immediately.
